Region and Geography: Sierra de los Cuchamatanes Highlands, Ixil Region, Northern Quiche Province

Climate: humid mountain tropical.

Varietals: Caturra, Catuai, Bourbon

Soil Type: Franco limoso, gritty humus.

Altitude: 1100 to 1800 meters.

Harvest: Dec through March.

Processing: wet-processed using traditional tank fermentation, 100% sundried on patios or in solar-driers.

Milling: hand-sorted by 150 Ixil women. Processed and stored in a single facility.
